Main Ingredients
- 1.5 kg short ribs
- 2 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 stalks celery, chopped
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoon tomato paste
- 1 teaspoon thyme
- Salt and pepper to taste
Preheat oven to 160°C (320°F).
Season short ribs with salt and pepper.
Heat olive oil in a large oven-safe pot over medium-high heat.
Brown the short ribs on all sides, then remove and set aside.
In the same pot, sauté onion, garlic, carrots, and celery until softened.
Stir in tomato paste and cook for another minute.
Add beef broth, red wine, and thyme, bringing to a simmer.
Return short ribs to the pot, cover, and transfer to the oven.
Cook for 3 hours or until the meat is tender.
Serve hot.
