Instruktioner
1. Rinse the quinoa under cold water.
2. In a pot, bring the water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes.
3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
4. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and feta cheese.
5. Drizzle with olive oil and lemon juice. Season with salt and pepper to taste. Toss to combine.
6. Serve immediately or refrigerate for later.
