Main Ingredients
- 2 kg Pork Belly with skin on
- 1 tablespoon Salt
- 1 tablespoon Black Pepper freshly ground
- 2 tablespoon Fennel Seeds crushed
- 4 cloves Garlic minced
- 1 tablespoon Rosemary chopped
- 1 tablespoon Thyme chopped
- 1 tablespoon Olive Oil
1. Preheat your oven to 250°C (480°F).
2. Lay the pork belly skin-side down. Score the meat and season with salt, pepper, fennel seeds, garlic, rosemary, and thyme.
3. Roll the pork belly tightly and secure with kitchen twine.
4. Rub the outside with olive oil and more salt.
5. Place in a roasting pan and roast for 3 hours, or until the skin is crispy and the meat is tender.
6. Let it rest for 15 minutes before slicing.
