Ingredients
- 1 package Puff pastry thawed if frozen
- 1 cup Sugar
- ½ cup Water
- 1 cup Milk
- 2 tablespoon Flour
- 6 Egg yolks
- 1 teaspoon Vanilla extract
- 1 strip Lemon peel
- 1 stick Cinnamon
1. Preheat oven to 220°C (430°F).
2. Roll out the puff pastry and cut into circles to fit the muffin tin. Press the pastry into the tin.
3. In a saucepan, combine sugar and water. Bring to a boil and cook until it reaches a syrupy consistency. Set aside.
4. In another saucepan, heat the milk with the lemon peel and cinnamon stick. Remove from heat and let it infuse for a few minutes. Remove the lemon peel and cinnamon stick.
5. In a bowl, whisk the flour and egg yolks together. Gradually add the infused milk, whisking constantly.
6. Return the mixture to the saucepan and cook over low heat until it thickens. Remove from heat and stir in the sugar syrup and vanilla extract.
7. Pour the custard into the prepared pastry cups.
8. Bake for 20-25 minutes or until the tops are browned and the pastry is crisp.
9. Let cool before serving.
