Main Ingredients
- 2 tablespoons vegetable oil
- 1 pound chicken breast, diced
- 1 pound andouille sausage, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 1 cup chicken broth
- 1 cup long-grain rice
- 2 teaspoons Cajun seasoning
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 pound shrimp, peeled and deveined
- 2 green onions, chopped
- Fresh parsley, chopped (for garnish)
Heat oil in a large pot over medium heat. Add chicken and sausage, cook until browned.
Add onion, bell pepper, celery, and garlic. Cook until vegetables are tender.
Stir in tomatoes, chicken broth, rice, Cajun seasoning, thyme, and bay leaf. Bring to a boil.
Reduce heat, cover, and simmer for 20-25 minutes, until rice is cooked.
Add shrimp, cook for another 5 minutes until shrimp are pink and cooked through.
Remove bay leaf. Stir in green onions and parsley. Serve hot.
