  • 1 cup couscous
  • 1 ¼ cups boiling water
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ cup chopped parsley
  • ¼ cup chopped mint
  • ¼ cup chopped cilantro
  • ½ cup diced cucumber
  • ½ cup diced tomatoes
  • ¼ cup diced red onion
  • 1 Juice of 1 lemon

Instruktioner 

  1. Place couscous in a large bowl.
  2. Add boiling water, olive oil, and salt. Stir and cover. Let it sit for 5 minutes.
  3. Fluff couscous with a fork.
  4. Add parsley, mint, cilantro, cucumber, tomatoes, and red onion. Mix well.
  5. Drizzle with lemon juice and toss to combine.
