Main Ingredients
- 1 cup white wine
- 1 tablespoon white wine vinegar
- 1 tablespoon shallots, finely chopped
- 1 cup unsalted butter, cold and cubed
- to taste salt
- to taste white pepper
1. In a saucepan, combine white wine, white wine vinegar, and shallots. Bring to a boil and reduce until the liquid is almost evaporated.
2. Reduce the heat to low and gradually whisk in the cold butter, one cube at a time, until the sauce is smooth and emulsified.
3. Season with salt and white pepper to taste. Serve immediately.
